What's really helped me with music is that it became part of my identity early on, and that stuck. I identity as a musician and with music fans, so if I stop at any time, something will bring me back in no time.
More relevant to your question is how I've stuck with things I don't identify so strongly with;
120+ days daily unbroken streak on Duolingo
2 years of gym 4 days a week consistently
But, the thing I did to do that was admit I have little talent or generic for either, admit I need help, and prioritise both make them part of my life. It needs to be more than having a goal.
Having a goal is good, but a having one single goal is a fragile thing...
Having a VISION of what you adding something to your life will give you is a very strong, resilient thing.
To do this you need;
Help with knowing what to do (beyond youtube, you need it laid out without distraction)
Weekly or multi-day accountability (Monday lives, Sunday open mics, multiple new videos a week)
Per to peer support (discord, live comments)
Interactive learning (Interactive tab, ask me questions on the livestreams, record or film yourself playing, jam with others, do gigs)
